Wild Leek & Potato Soup
We love this soup! It is pure comfort in a bowl: creamy, tasty and delicious. You can substitute coconut milk or cream instead of the heavy cream for a nice coconuttty taste to it. We make big batches and then freeze several meal-sized portions for easy meals on those cold, wet days when we’re craving a quick, hot meal to warm up our bellies. Serve with some fresh baked bread and it makes a great starter or dinner with friends. Enjoy!
