Wild Leek Pesto
A very tasty twist on the usual basil pesto, this very flavoursome wild leek version has an extra kick to it that we love! You can use any kind of nuts you like but we tend to make it with walnuts. It freezes well so you can make large batches and take out a cube or two at a time as you need them. This recipe makes one ice-cube tray full (16 cubes) but as it makes quite the mess of the blender we usually make a double batch to make the clean up worth while!
Our favourite way to eat this pesto is to mix it with mayonnaise and use it as a sandwich spread, absolutely delicious and will spice up any cheese sandwich. There are many other ways you can use it; you can mix it with yoghurt for a dip, mix it in with pasta, as a topping for steak or chicken, on top of pizza, etc etc…
