Lion’s Mane Crab Cakes

 

This recipe can be used for any Hericium mushroom, so feel free to substitute bear’s head tooth or coral tooth mushrooms instead if that’s what you have. All these mushrooms tend to have a lot of water in them so make sure to get as much moisture out before you add them to the other ingredients. Do this by cooking them first, as described below, followed by squeezing them with your hands to get out any water that’s left in there. You can follow the recipe exactly or, do what I do, and work with what you have in the kitchen when you’re lucky enough to come home with one of these rare finds! These cakes are extremely rich in taste so a couple per person is usually enough. We absolutely love them and hope you do too!

Cook mushroom until all the water has evaporated

Mix the mushroom with all the other ingredients

Form mixture into round cakes and let sit for 15 mins

Pan-fry one side…

…and then the other side until golden brown

Serve with a dollop of wasabi mayonnaise
