Spicy Cucumber Relish

This relish has a nice kick to it and works great to spice up an otherwise simple cheese sandwich. You can also serve it with some cheese, crackers and a glass of wine for a tasty appetiser. This recipe will need to be pressure cooked and makes about 17 pint size jars.
