Chicken of the Woods in a Coconut Cream Sauce

 

We love this recipe! Easy to make with an eastern flavour to it with the addition of the coconut milk. It can be served on rice, with ramen noodles or with some fresh, crusty dipping bread. You can substitute in any vegetables you have handy but I like to make them crunchy ones to add a bit of texture to the dish.
